Cheesy Broccoli Rice Bake (Comfort Food Essential)

1 cup uncooked rice
2 cups broccoli florets
1 cup chicken broth
1 cup milk
1 cup shredded cheddar
½ cup shredded mozzarella
1 tbsp butter
Salt, pepper
Paprika (optional)
Instructions:
Preheat oven to 375°F. Cook rice according to package instructions. Steam broccoli until just tender. In a pot, warm the broth, milk, and butter until steaming. Add cheddar and mozzarella, stirring until melted into a smooth cheese sauce. Season with salt, pepper, and paprika if you want a little color.
Combine cooked rice, broccoli, and cheese sauce in a baking dish. Mix evenly and smooth the top. Bake uncovered for 20 minutes until bubbly and slightly browned on the edges.
