🎄🥥🍫 ALMOND JOY CHRISTMAS CAKE – tastes exactly like the candy bar but in cake form!! 😍 Layers of moist chocolate cake + creamy coconut filling + chocolate ganache + toasted coconut on top = holiday heaven! 🎅✨ Ingredients (9-inch 3-layer cake) Chocolate Cake: • 1 box devil’s food or chocolate fudge cake mix (+ eggs, oil, water as box says) OR your favorite homemade chocolate cake Coconut Filling: • 14 oz sweetened condensed milk • 3 cups sweetened shredded coconut • 1 cup powdered sugar • 1 tsp vanilla • ¼ tsp almond extract (optional but SO good) Chocolate Ganache: • 1½ cups semi-sweet or dark chocolate chips • 1 cup heavy cream Topping: • 1½ cups sweetened shredded coconut, toasted • Whole or sliced almonds (optional) Instructions
1️⃣ Bake the chocolate cake in 3 (9-inch) pans according to box directions. Cool completely.
2️⃣ Make coconut filling: Mix condensed milk, coconut, powdered sugar, vanilla & almond extract until thick and sticky.
3️⃣ Level the cake layers if needed. Place first layer on plate, spread half the coconut filling, top with second layer, spread remaining filling, add third layer.
4️⃣ Make ganache: Heat heavy cream until just simmering, pour over chocolate chips, let sit 3 mins, stir until smooth. Let cool 5–10 mins so it thickens slightly.
5️⃣ Pour ganache over the top, let it drip down the sides.
6️⃣ While ganache is still wet, press toasted coconut all over the top and sides. Decorate with almonds if you want!
7️⃣ Chill 30 mins to set, then slice & watch everyone lose their minds! 🤯❤️ Tag your coconut-loving friends!! 🥥🍫
